Situated in the historic Old Town of Tallinn, this bakery is overseen by Francois, a third-generation baker. At its core, Maison Francois is all about 'savoir-faire' and fostering a strong sense of community.
Purpose of the role:
We are seeking a talented Senior Sous Chef to join the Maison François. The Senior Sous Chef will work closely with the Head Baker to oversee kitchen operations, maintain food quality and consistency, and lead a team of culinary professionals. We welcome candidates with strong culinary skills and a passion for delivering exceptional dining experiences to our discerning clientele.

Your responsibilities will be:
- Collaborate closely with the Head Baker to develop and execute innovative Belgian-style à la carte dishes that reflect the boulangerie-style concept of the bakery.
- Oversee daily kitchen operations, ensuring high standards of food quality, taste, and presentation across the à la carte offerings.
- Lead the kitchen team, ensuring smooth workflow, adherence to recipes, and presentation standards, while upholding proper food handling procedures.
- Work with the Head Baker to create seasonal menus and special dishes that showcase authentic Belgian flavors and culinary creativity.
- Supervise kitchen staff, providing mentorship, culinary guidance, and support in organizing kitchen processes to ensure efficient service.
- Manage inventory, ordering, and stock rotation to minimize waste, maintain ingredient freshness, and ensure timely restocking.
- Ensure compliance with food safety and sanitation standards, regularly inspecting kitchen equipment, workspaces, and storage areas.
- Assist with staff scheduling and labor cost management to optimize productivity and efficiency.
- Collaborate with the front-of-house staff to coordinate food service, ensuring timely delivery to guests and seamless communication between kitchen and service staff.
What we expect from you:
- Proven experience as a Senior Sous Chef or Senior Line Cook, with 6-7 years in French or Belgian cuisine or casual dining environments.
- Culinary degree or equivalent certification from a recognized culinary institute is preferred.
- Strong leadership and organizational skills, with the ability to inspire and manage kitchen staff to deliver consistent quality and excellence.
- Attention to detail and ability to multitask in a fast-paced environment.
- Effective communication skills to liaise with kitchen staff, management, and suppliers.
- Flexibility to work evenings, weekends, and holidays as required.
- A passion for delivering exceptional culinary experiences and a commitment to innovation.
- Medical Certificate for food operators required.
- Minimum age requirement: 21 years.
