Purpose of the role:
We are seeking talented Senior Sous Chefs to join our soon-to-open new venues (Écrin, Maison Francois). The Senior Sous Chef will work closely with the Head Chef to oversee kitchen operations, maintain food quality and consistency, and lead a team of culinary professionals. We welcome candidates with strong culinary skills and a passion for delivering exceptional dining experiences to our discerning clientele.

Your responsibilities will be:
- Collaborate closely with the Head Chef to develop and execute innovative dishes that showcase the restaurant's culinary vision and exceed guest expectations.
- Oversee daily kitchen operations, ensuring adherence to high standards of food quality, taste, and presentation.
- Cultivate and maintain positive relationships with suppliers, negotiating contracts, sourcing premium ingredients, and staying abreast of market trends and product offerings.
- Supervise kitchen staff to ensure efficient workflow, proper food handling procedures, and adherence to recipes and presentation standards.
- Lead and mentor kitchen staff, providing guidance on culinary techniques, menu execution, and kitchen organization.
- Collaborate with the Head Chef to develop seasonal menus, special dishes, and tasting menus that showcase authentic flavors and innovative culinary concepts.
- Assist in menu planning, recipe development, and cost control initiatives to optimize profitability while maintaining excellence in food quality.
- Manage inventory levels, ordering, and stock rotation to minimize waste and maintain optimal ingredient freshness.
- Ensure compliance with food safety and sanitation standards, conducting regular inspections of kitchen equipment, workspaces, and storage areas.
- Assist in scheduling kitchen staff and managing labor costs to optimize productivity and efficiency.
- Work closely with front-of-house staff to coordinate food service and ensure timely delivery of orders to guests.
What we expect from you:
- Previous experience as a Senior Sous Chef or Senior line Cook in a high-volume restaurant, preferably with 6-7 years of experience in either French cuisine or casual dining settings.
- Culinary degree or equivalent certification from a recognized culinary institute is preferred.
- Demonstrated leadership abilities, with the ability to motivate and inspire kitchen staff to achieve culinary excellence.
- Excellent organizational skills and attention to detail, with the ability to multitask and prioritize in a fast-paced environment.
- Effective communication skills, both verbal and written, with the ability to collaborate with kitchen staff, management, and suppliers.
- Flexibility to work evenings, weekends, and holidays as required.
- A passion for culinary innovation and a commitment to delivering memorable dining experiences to guests.
- Minimum age requirement 21 years.
